This dish was made using Pangea Shellfish's Bay Scallops. Jorge, a member of our operations team with years of culinary experience, will be continuing to create dishes from the Pangea product list to provide ideas and inspiration for all.
Plantain Cups
Ingredients:
Green Plantain
Salt
Preparation:
Peel 1 large green plantain and cut in 5 pieces. Heat up oil in a pan and fry for 2 minutes in medium heat. Let the plantain cool for 10 minutes. Oil the inside of a lemon squeezer and place plantain inside and squeeze, remove plantain cup and fry again for 5 minutes. Add salt to taste.
Scallop Ceviche
Ingredients:
Chopped Scallops
Roasted Corn
Diced Sweet Mango
Finely Chopped Red Onion
Diced Avocado
Cilantro, Orange
Tajin
Lime Juice
Salt
Black Pepper
Directions:
Place chopped scallops in a large bowl and add the juice from half an orange and 2 limes. Add 4 oz. roasted corn, 4 oz. diced sweet mango, 4 oz. chopped red onion, 1/2 a chopped avocado, 1 tbsp. of tajin, and 1 bunch of chopped cilantro. Mix well and add salt and pepper to taste. Scoop into plantain cups to serve.
